This is a red lentil dahl I made yesterday afternoon during the snow day. I added 2 types of seaweed for extra iodine. This recipe includes kelp and dulse. If you like, substitute 1 cup of chopped kale for the seaweed. Enjoy!
1 c red lentils
3 c water
1 small onion, diced
4"x1" strip of dried kelp cut into 1/4" pieces
2 carrots, cubed
1 tsp salt
1/4 tsp pepper
dash or two of nutmeg
1 T ketchup
2 smoked chipotle peppers (seeds removed and diced)
a few tablespoons of chopped, dried dulse
Add all ingredients to a soup pot. Heat to boiling. Simmer over low heat for 2 hours. Serve hot with a side of rice.
