Apple Spice Syrup

This syrup is made by slowly cooking one cup or apple juice or cider with various whole and ground spices until the mixture turns to a thick syrup. This takes about 3 hours (a perfect slow cook recipe for a snow day like yesterday). 

Buy organic oranges with the incentive to cut up the peel into small squares for drying. The recipe has a handful of orange peel for added vitamin C and orange essential oil. Most of the essential oil from an orange is found in the peel. The cinnamon and other spices increase warmth and circulation in the body. Enjoy the syrup over ice cream or stir into hot tea.

1 c apple juice or cider
2 T fresh or dried orange peel
1/4 tsp nutmeg
1/2 tsp ginger
1 tsp cinnamon
6 cloves

Add all ingredients to a medium saucepan. Heat over a low flame, uncovered, until the liquid turns to syrup. This may take up to 4 hours. Serve warm or cool.

Store any unused portion in the refrigerator in a glass jar.
