Potato Pancakes

Here is a recipe for potato pancakes. These have stumped me over the years many times. However, in the past few months, I have tried a new recipe that has been met with success.

3 yukon gold potatoes 
2 eggs
1/3 c half and half
1/2 tsp salt
1/4 tsp pepper 
dash of nutmeg
a few tablespoons of olive oil

Beat the eggs with the half and half. Grate the potatoes and add to the egg mixture. Add salt, pepper, and nutmeg. Mix well. Heat 2 tsp oil in a medium hot skillet. Add about 1/4 cup of the potato mixture to the skillet. Cover with a lid and brown on both sides for 5 minutes each.

Makes 6 pancakes.
